Preschool Graduation





Alina graduated from preschool this past week. I can't believe she will be starting kindergarten. She was so cute during the whole program, and as you can see loved the treats afterward.

McKayla's curtains


I tried to get a picture of McKayla's new curtains and rod, but for some reason couldn't get a good picture. I tried with the light on, blinds open and closed, this was the best I could do. They are purple and white tool and the curtain rod is the same as Alina's, just with a purple flower instead of pink. I think they turned out really cute and will try at a different time of day to see if I can get a better picture.

Alina's room




Alina's room is finally finished. We got the curtains hung and the shelves painted, new knobs put on and them hung as well. I think is turned out really cute and Alina loves it.

Zoo Trip




For Alina's last week of preschool they had a zoo trip. McKayla happened to be off that day, so she got to go too. They had a great time, although the place was a mad house, as several schools had zoo day.

pecan crusted chicken

This is another request that is really yummy.

1 1/3 - 2 lbs chicken tenders
salt and pepper
1 c flour
2 eggs beaten with a splash of milk
1 c plain bread crumbs
1 c pecans, finely chopped
1/2 tsp nutmeg
zests of 1 orange

Combine bread crumbs, pecans, nutmeg and orange zest
heat 1 1/2 - 2 inches oil over med-high heat in a skillet
Season chicken with salt and pepper
Coat chicken with flour, then egg, then bread crumb mixture
Fry tenders

southwest egg rolls

These are really yummy!!!
2 1/2 c shredded cooked chicken
1 1/2 c shredded mexican cheese blend (I used cheddar jack)
2/3 c corn
2/3 c black beans rinsed and drained
5 green onions, chopped
1/4 c cilantro, minced
1 tsp salt
1 tsp ground cumin
1 tsp grated lime peel (I also added the juice)
1/4 tsp cayenne pepper
1 pkg (16 oz) egg roll wrappers
Oil for frying

In large bowl combine first 10 ingredients. Place 1/4 c mixture in center of each egg roll wrapper. Fold wrapper. In an electric skillet, heat oil to 375, fry egg rolls.

Dip:
1 c ranch salad dressing
1 medium ripe avocado, peeled and mashed
1 Tbs minced cilantro
1 tsp grated lime peel (again, I added juice)
Combine, serve with egg rolls

The family room



The family room is in the basement and is really big. We painted the walls and put a the chair rail. As you can see we have no furniture, Ky took a saws-all to all of it so it would come out of the basement in our old place. And ignore the TV, McKayla was watching Howie do it (her favorite show.) The first picture is the computer area, and soon to be pool table area.

New light


We replaced the light in the entry with this one. This was a must change on the house as the old light looked pretty bad.

The Kitchen



This is my new kitchen, not huge, but it works.

McKayla's room


This is McKayla's room, she did a great job picking out the color. I don't have a picture of Alina'a room because she was asleep when I was taking pictures.

Our new house




So I am finally getting pictures up, sorry it took so long. Please don't mind the mess but between moving, four soccer games, school and guitar I haven't had a lot of time to get things together. This is our living room.

Dork tooth


McKayla has a major dork tooth and thinks it is the funniest thing. The poor kid looks so funny. She loves to show it to everyone and tell them that it's her dork tooth.

snow man



We got more snow during the end of March and the month of April than the rest of the winter combined. The girls love to go out and play in the snow and make snowmen. They did this almost all by themselves, they only needed help putting the body and head on.
